The Japanese, known for their health and long lifespan, use rice as a staple in their diet. However, using white rice as a staple can cause a deficiency in thiamin (B1) and thus beri beri. Most americans are not at risk for beri beri and i eat B vitamins regularly, but brown rice does add alot of that fiber that i need to stay full. The initial retaliation against brown rice is its taste. in third world countries, they prefer white rice because they can eat alot of it easier (its the only thing they have, and they need the calories). It it is not as tastey as some things, i agree.
but here is the trick (from turkey)
fry it in a small ammount of olive oil first, which adds only a small ammount of healthy fat to the meal (and gets you fuller quicker!). this helps you absorb and taste the fat soluble flavors in the rice. Then boil the rice as normal. i usually cook it for an extra 20 minutes after what it says on the bag, because it is just so tough.
rice by itself is not a meal. here is how to make it even more powerful!
add steamed brocoli and carrots. maybe some onions, mushrooms, peas, whatever is in your refrigerator. but brocoli is a must. Steam them in a pan with a few tablespoons of water, and WITH A LID. this helps keep the watersoluble nutrients from evaporating. This should cook very fast, a few minutes tops. When they are soft enough to stab with a fork and chew is just right. This is actually called blanching in the food processing buisiness (what they do before they freeze them) and brings out the vibrant colors in the vegetables.
mix in the rice with the vegetables for a few minutes then it is ready to eat. Sometimes i add soysauce. i always add aton of salt. i am not worried about hypertension, but those who are should not do this!
Finnaly, serve it with green/black tea, red wine (muscadine is my new fav), or milk.
**note: this meal has NO PROTEIN. add beans, a salad with nuts, or drink with milk if you do not get adequate protein from the meals in the rest of the day. Remember, you need .8g per kg of body weight per day!
